What I found particularly helpful was the section near the beginning entitled "Get to know your ingredients" including information on Spelt flour, Vital Wheat Gluten, Buttermilk powder, Panko Crumbs as well as the recipes for Whole Wheat pizza dough and Scones and others.
I would seriously hesitate to judge this very helpful book based on a single recipe as there are many different kinds of excellent sections with a variety of recipes.

I tried the chicken wing and tuna casserole recipes and found the flavor very lacking.

A dish do over simply means she takes the fat out. Better to take out more sugar and more carbs - the two things that make us sick and fat.
